Meal Planning Monday

It was quite a change to the weather yesterday, starting off with some hailstones and then snow. We have been quite lucky up here as it has normally snowed quite a bit by now but we have only had one day where the snow had been lying which was at the start of December and a couple of days where there was a quick flurry of snow, other than that nothing!

The colder weather always makes me want to eat warm, comforting foods but since I went shopping on Friday the meal plan has already been set.

Friday - We had Tacos, we were going to have them on the Thursday but some numpty (me) forgot to buy passata/tinned tomatoes and so we had a takeaway instead.

Saturday - Was Italian night so I made bruschetta for a starter then we had meatballs and pasta.

Sunday - We had Chicken Fajitas, crispy chicken ones for Mr M and smoky BBQ ones for me.

Monday - Another Mexican meal but this time it is Chicken Enchiladas, this means we can use up the rest of the guacamole/salsa/soured cream, etc from yesterday.

Tuesday - I bought a Groupon voucher for afternoon tea at a Hotel (I'm taking my Mum) so I doubt I will be that hungry later in the evening but Mr M can have Scampi and Chips.

Wednesday - Going out for an Indian meal with my friend, this is another Groupon deal that I bought.  I had King Prawn Pathia last time so will have that again.  Mr M won't starve though as he is going to his Mum's!

Thursday - There are sausages in the freezer that need using up so it will be Sausage Casserole.

What are you wearing?
I have just got home from work so I am wearing trousers from Next and a black lace top from Dorothy Perkins.

Ever been in love?
Yes and still am.  We have been together 10 years now.

Ever had a terrible break up?
Yes, I don't think there is ever a good one but looking back now I'm glad to see the back of him! :)

How tall are you?
Short, I'm only 5 foot 2.5 inches

How much do you weigh?
Not saying but I've put on a few pounds after the medication I have been on so hoping to shift them all soon.

Any tattoos?
No tattoos, I used to want a butterfly one on my shoulder years ago but have gone off the idea now!

Any piercings?
Just my ears.  I got my ears pierced for my 9th birthday and then just before I turned 20 I got my right ear pierced on the cartilage.  For that one I had a double vodka before getting it done :)

Having no idea what this meant I had to look it up.  It means One True Pairing! This is where a couple are the perfect partner for one another.  Years ago when the film Titanic came out, I wanted the kind of relationship that Jack and Rose had (but a bit longer) as they seemed to be soulmates.  Edward & Bella seem obsessed with one another and I think that kind of relationship would do my head in!

Favourite Show?
It's finished now but I loved Dexter! I also like The Hotel Inspector and Location, Location, we don't watch that much "normal" TV now and watch more on Netflix nowadays. I'm currently watching Grimm which is quite good.

Favourite Bands?
I love Coldplay, Snow Patrol, Blur, Oasis, The Beatles, U2, I also used to love Garbage and Stereophonics.

Something you miss?
Being a child and having no responsibilities, no worries about life and where your only problem was handing your homework in on time.  Also my Grandparents as I would love be able to see them and spend time with them again.

The song I have in my head at the moment is Dark Horse by Katy Perry!

How old are you?
I'm 38!! Don't know how that happened as it really doesn't seem that long ago that it was my 18th!!

I'm a Libra.

Definitely honesty, a sense of humour and loyalty. Oh and easy on the eye too.

I don't have a favourite actor but quite like the actors in Harry Potter and also Idris Elba (love him in Luther)

I like listening to my music (very) loud in the car.

Where do you go when you are sad?
I go to wherever I will be on my own, bedroom or bathroom.

How long does it take for you to shower?
Probably about 10 mins

How long does it take you to get ready in the morning?
I get up at 6am and leave the house at 7.15am. During this time I've got myself ready, made breakfast, put on make up and made my Hot Chocolate to take to work.

Ever been in a physical fight?
No, I've never been in a fight before.

Turn on?
A nice aftershave, nice eyes and a genuine caring person. Oh and wearing trunks, boxer shorts don't have the same appeal!

Turn off?
B.O., bad breath, arrogance and rudeness.

The reason I started blogging?
After watching loads of YouTube videos, reading blogs about people who were organised, had immaculate homes, cooked/baked lots of nice things I decided that I would attempt to try and be more like that instead of my disorganised chaos that I live in. I felt that a blog would help encourage me to stick to it.

Dying, water (when I'm in the shower the shower head has to be right down so it doesn't spray water in my face), and being old and on my own.

Last thing that made you cry?
When my second IVF failed earlier this month.

Last night.

An Undomestic Goddess - due to my lack of ability on being a Domestic Goddess :)

It was Pictures of Lily by Paige Toon. I got it as an iBook from the 12 days of Christmas App.

Not reading anything at the moment.

My husband.

Sarah, someone at my work, to check that something got collected.

Favourite Food?
I am really into Mexican food at the moment, love fajitas. Also love Chinese food, honey chilli king prawn is my favourite.

Place you want to visit?
I really want to go to America! I'd love to go to New York, Las Vegas and Florida. New York for shopping, Las Vegas for the experience and Orlando for the Disney experience (I love Disney)!

I'm at home now but before that I was at work.

No, I don't have eyes for anyone else :)!

I love Haribo's Tangfastic sweets, especially the cherry ones.

I don't play an instrument, although I did play the recorder when I was at school.

I have quite a few pieces of jewellery that I love but I got a Links of London Sweetie bracelet a few years ago as a thank you from my boss's wife for organising a ceilidh to raise money for the local cancer charity that helped him when he was dying from cancer.

Last sport you played?
I've just signed up to be on my work's Table Tennis team even though I haven't played it since I was at school. Hopefully they don't expect to win!!

Last song you sang?
Dark Horse by Katy Perry.  When I am in my car I think I have an amazing voice, I'm sure that Simon Cowell would have a different opinion on it though :).

Favourite chat up line?
I don't have a favourite as most of the time they just sound plain weird, how about starting a conversation about something instead with someone you like? I remember being out with my neighbours when I lived in Twickenham (they were young sport students) and they were discussing chat up lines & the worst one was "if you have lost your virginity, can I have the box it came in?" I mean really?! Do they think that would work?!

Have you ever used it?
Ermmmmm no! Can't say that I have!

Last time you hung out with anyone?
We went out last week for a meal and cocktails to celebrate Mr M's Birthday.

Meal Plan Monday

Hello.......I'm back! I hadn't fallen off the face of the Planet, I just took some time off of blogging as had some stuff going on but now I'm back and raring to go :)!

I've just started a new job where my hours are 8am-1pm so I am hoping that this makes me more organised in meal planning/cooking meals and being less reliant on takeaways and ready meals. I find it easier to meal plan Friday-Thursday as Friday is the day that I go shopping, so some of my meals will already been made and eaten by the time I post on a Monday.

Friday - Shopping was delivered at 6pm so had Fish & Chips from the Chip Shop as couldn't be bothered to cook.

Saturday - Out for an early dinner to La Tasca for Mr M's birthday which was earlier in the week. And also some cocktails too.

Sunday - Lemon & Garlic Roast Chicken with Croquette Potatoes & Veg

Monday - Chicken Fajitas

Tuesday - Chicken & Leek Pie (made with the chicken leftovers) & Sweet Potato Fries

Wednesday - Roasted Pork Belly Slices & Veg

Thursday - Tacos

2014 Blogger Challenge - Food - Lemon & Garlic Roast Chicken

I have missed out the last couple of posts from the blogger challenge due to other things going on so this is my first post in a while. This month's topic was on food and even though I like my food I wasn't sure what would be the best route to go down, do I write about my favourite takeaway, restaurant, things I've baked or cooked?  As I have left it a bit late in the day to do my blog post (it needs to go up in the next couple of days) I decided since it was Sunday to write about the Sunday Roast that I am cooking today...........Roast Chicken!!

We don't often have a roast dinner that often but I fancied having one this week.  I like roast pork & beef but I don't "do" lamb as I find it quite a strong, bitter meat.  One thing that I won't compromise on with my meat is that it has to be free range or organic.  I saw "Hugh's Chicken Run", a tv programme by Hugh Fearnley-Whittingstall a few years back about how chickens were intensively farmed.  It was actually quite an eye opener and since watching that programme I have never bought a chicken unless it was free range.  They might be a bit more expensive but I'd prefer to know that they had a happy life rather than being cooped up in a shed with no natural light, encouraged to over eat so they get bigger quicker, no environmental enrichment and are normally slaughtered before they are 40 days old.  Even if your budget doesn't stretch to free range there are higher welfare products out there such as Freedom Foods at a cheaper price.


Garlic Bulb (cut in half widthways)
2 Sticks of Celery (chopped into quarters)
2 Carrots (chopped into quarters)
Onion (chopped into quarters)
Lemon (cut into quarters)
Olive Oil
Salt & Pepper
Fresh herbs (I used Rosemary but Thyme works just as well)

How to cook 

First of all remove your chicken from the fridge and remove the packaging for around 30 minutes, this helps it to reach room temperature which is better for cooking.  During this time I cut up the veg and a lemon.  I placed the veg into my Pampered Chef Deep Covered Baker (this is very good for cooking the chicken and keeping it moist, also I never paid this for the product as I hosted a party and got to choose a certain amount of products for free due to the sales I made) and drizzled with olive oil.

I placed the chicken on top of the veg and drizzled with olive oil, seasoned with salt and pepper, put half a lemon inside the chicken and put a quarter on either side of the breast, placed the herbs on the top and bunged it into the pre-heated oven (Fan oven 170 degrees Celsius) for the time required.

Always cook your chicken for the time stated per weight of the bird.  For the last 30 minutes of cooking I removed the lid so the skin could get crispy.  To check that it's fully cooked, insert a skewer or something sharp like a knife tip into the fleshiest part of the leg and ensure that the juices run clear, if there is any sign of blood, cook your chicken for longer.  Once cooked, remove your chicken and allow it to rest for at least 15 minutes or longer as this allows the meat to retain the juices.  If you cut into it without being rested you risk the meat being dry and tough.

I served this with sausagemeat balls, potato croquettes, vegetables and gravy.  I will use the rest of the chicken to make a chicken & leek pie later on in the week and also for soup.

If you have a cat or dog please do not feed it the chicken due to the garlic used in cooking as this can cause them to be very ill!

Next Homeware Haul

Most of my furniture and accessories (as well as some of my clothes) are from Next. I do really like their ranges and they are not too expensive either. Whenever we are decorating a room or looking for something we need for the house, Next is always the first place we look.

Our Living room is decorated in neutral colours (Cookie Dough and Soft Truffle) so I like to change the colour scheme of our accessories to change the look of our room rather than having to re-decorate.  As it's now Spring I thought I would go for green and pink accessories.  We also needed new curtains so that was something else that I bought.

These are the curtains that I bought:

The accessories that I bought were green cushions x 4, green butterfly tealight holders x 2, a cream bowl, Pot Pourri, an Owl vase, an Owl tealight holder and a decorative Love word.  The other thing that I bought which wasn't for the Living room was a Butterfly water bottle to go with the Butterfly glasses that I bought at New Year.  I thought that they would go well as a lemonade set for Al Fresco dining (I'm thinking of warm Summer evenings already!!).

And here is the finished look!  We are about to change the flooring in our living room as this was the original flooring that we had when we bought the house.  It didn't bother me too much but after finding out that it's been laid the wrong way (laminate/wooden flooring should be laid with them running in the same direction as the longest, straight wall) it's really annoyed me, also there are a few chips in it too so it does need replacing.  Once it has been finished I will post a photo on Twitter.

Don't think the cat is too impressed with the new look :)!
